Tomato, Lentil & Thyme Soup with added Chorizo! This sounds lovely as is, but I just fancied a little adaptation and 100g chorizo was it. Delicious, filling and great for a lazy day when you don’t want to lift a finger (and you feel a bit chilly again) 🥶

Spanakopita… or Filo Spinach Slice. Take your choice between the recipes on Cookidoo. This is one of my fave things ever and I mix it up a bit and add fresh parsley, mint & dill. I served it with a tomato onion salad dressed with pomegranate molasses, red wine vinegar & chilli. Check your pie isn’t getting too brown on top and cover with a sheet of foil if needed x

Blueberry & White Chocolate Traybake. With some raspberries thrown in for good measure. This cake is always a winner and don’t be put off if you don’t like white chocolate as it melts into the mixture. It’s divine ❤️

Raw Asian Salad. It’s been a very crazy year so far, in fact this is my first weekend of no plans! After a great leadership meeting in Manchester this week, I have had time to connect with dear friends (who also happen to be some of the top team leaders and advisors across the country), share good practice, ideas and inspiration to drive our businesses forward.
